so exciting! ok so I had a bunch of celery that I cut up because I am in "get prepared" mode right? ok so I have been staring at this Tupperware of celery for a few days now and it looked so boring and yucky that I had to find a way of eating it and btw I am kinda sick of Peanut butter folks. So, I started thinking hmm celery, nonfat yogurt...there must be something I can do with this. I googled and came up with this amazing recipe! I am telling you, you will be licking the spoon!!!!!!!!!!!!!!! ok so here is what I put in there
Nonfat yogurt
diced up celery
dried up or fresh mint
red pepper (depending on how spicy you like it)
a tablespoon of lemon juice (fresh please no bottles stuff allowed!)
pomegranate
red grapes
teaspoon of honey (i like to use raw organic)
I was out of apples but apples would be nice in this too
salt ...trying to cut it out but taste so good =(
ok so mix this all up...try to have a nice even amount of yogurt and celery...I used my leftover celery as decor and something to use as a dip...I guess this is more like a dip unless you add lettuce..so the best part of this is you make it at night and let it sleep in the fridge so all the yummy flavors really get in there and Lunch is ready the next day...it's ok if you start licking your spoon and the bowl as you make it ;)
