Getting Wild!

Keep your pants on I'm talking about rice! So you may have seen my post last year about how I messed up on a wild rice recipe. I decided to give it another whirl. I was recently at a friends house and she was serving wild rice and it looked nothing like mine. Apparently, I had under cooked my rice. I followed the directions on the bag the first time but when I did some research I found out that it needs to be cooked about an hour with maybe some more water than was suggested. I ended up using about 4 cups per 1 cup of rice. I kept adding a little bit of hot water as it was cooking but I started off with about 2 1/2 cups at first. If you have any suggestions on how to cook wild rice I would love to hear from you! So lets start cooking! As I was cooking my rice I had lots of time to start chopping up my veggies into tiny pieces and cooked them down into a nice savery base. Here are some pics and steps..

chop chop this celery into tiny pieces just split in half and start chopping  
put a little bit of olive oil or coconut oil to saute the onions

chop chop the mushrooms..oh and btw wash the celery really well and the mushrooms can just each get a quick wipe with a wet paper towel



once the onions are cooked down add the celery and mushrooms  I didn't really use a measurement for this I pretty much chopped about half of a boc of mushrooms and used about maybe a cup of celery there are no rules just put in however much you want knowing that you will be getting about 3 cups of rice 

added a cup of this towards the end ...I also seasoned both pots with salt and towards the end  added a bit of oregano to the veggie mixture  (I might leave this ingredient out next time.. I didn't care too much for it or perhaps I put too much only about a teaspoon is enough) I also added about a cup of water to the mixture 


oh the most important step when you strain the rice save the water and add it as a broth to your veggie mixture this makes it taste so yummy ..finally add the rice cook for about 10 more minutes and enjoy! it was kind of a mix between a soup and a rice plate but it was definitely comforting mmmm

I still have some left over so I may try this again or maybe look for another recipe. I also have some hemp seeds that are expiring soon might make some hemp milk out of it with my blendtec or maybe a dessert..tune in next time =)
