Lazy Beans
I decided that I refuse to eat beans in a can and bought some dried black beans. Boy was that a mistake. I mean ya, it's great there's no preservatives blah blah blah but who's got the time? Well, if you are like me and bought some dried beans and they are just sitting in your kitchen, I have got some solutions for you. Here is what I did on my lazy Oscar Sunday, after going to the farmers market of course Btw don't ever go late to the farmers Market all the good stuff is gone =( If you have canned beans scroll down to the recipe and pat yourself on the back! Make sure you wash the nasty sodium off of them first though.
First, you get the beans and you wash them (look this isn't fast so do this on a day that you are bored and feel like just lounging around) Boil the beans with some water for 2 minutes..a cup of beans takes about 2 cups water. Let this sit for an hour. Go to your favorite blog and start reading heheh ;) Ok after an hour get your beans and wash and drain them. We are ready to cook now. Oh that was the soaking overnight process for people like me who plan meals according to their stomach not their schedule. I mean really soak beans at night and then make them the next day? This is 2013 I ain't got time for that! Ok so we are ready to go. Grab your pressure cooker. Oh you don't have one? ok get in your car and go buy one! This thing saves soooooo much time! Really worth the investment.
Ok, welcome back home. Throw in the beans and for each cup I would do about 2-3 cups water (I like to use filtered water when I cook) Cook on high until the high pressure indicator goes up (each one is different but you will know when it makes a fshhh sound) that means there is lot's of pressure trapped in there. Now lower the heat to about 2 or low depending on what kind of stove it is and wait about 15 minutes. Once this is done, we are not done yet...wait about 30 minutes (take your pressure cooker off of the stove) and finally you are ready to open up your beans and enjoy them.
So all this waiting around has made you hungry right? what I did was just add a little lemon and salt and just eat them like that but then I wanted something sweet!....So here is a recipe that I tweaked ..I used to add coffee and eggs to this recipe but now that I am a vegan here is what I used..
2 bananas
about a cup of dates (pitted) (you can add more if you want it really sweet but they are high in calories)
a handful of walnuts
a few drops of vanilla
3 teaspoons of Hershey's unsweetened chocolate powder (Carob powder is prob better but that's all I had)
a dash of cinnamon
a dash of raw oatmeal (only if you are blending this in something really powerfull like the blendtec)
2 cups of Almond Milk
oh and last but not least one cup of BLACK BEANS!
Blend all your ingridients
Cook on 365 for about 45 minutes (you can use coconut butter to grease the pan)
I know you are thinking that sounds so nasty but check it out..........
I suggest pairing it up with your favorite fruit! Enjoy! Oh and if you are expecting it to taste like red velvet cake get your head out of your a** this is vegan, sugar free, egg free, gluten free, fat free, junk free, everything free! It will definitely get rid of that chocolate food craving though I promise..
