Sweet Potato Indian style

Indian food. Ok, let me start of by saying that I don't have a great relationship with Indian food. I wish I did because when people say they are going to "Indian"  I'm like oh that sounds so cool and something different from the usual sushi that usually comes up when dining out in LA. So, a few years back I had a bad experience with Indian and by bad I mean my body rejected it. I do love Indian culture from the movies to their clothing, music and the woman are oh so beautiful! I kinda even think I look Indian so I decided I need to give this another shot. After all I can't ask people to be open minded about being vegan if I am not open to trying new things myself right? I looked up sweet potatoes on youtube and found this wonderful recipe. The entire house smells like an Indian restaurant, which is such a nice change from the usual smells that come out of our kitchen (onions and olive oil usually). I am so in love with this recipe only because I am so proud of myself for trying out something new and loving it! I have never made sweet potatoes before and I know they are easier on the tummy than white potatoes so lets get to the recipe.

Ok this is the part where you grab a friend, relative, boyfriend or husband..basically anyone that owes you a favor and have them wash and peel the potatoes.

Next, heat up your pressure cooker and throw in a teaspoon of coconut oil, as soon as this melts throw in a pinch or two of the following (make sure to say "bam" each time)

corriander
cummin
cayane pepper
curry

chop up a few cloves of garlic (I like using the already peeled ones)

stir this around a bit and you are ready for your sweet potatoes
oh btw your friend peeling the sweet potatoes also has to slice them up into nice little round slices too ;)

throw in about half a cup of water so it doesn't stick to the bottom

add one cup of green peas (frozen is fine but obviously fresh is always best)

Voila! now you just add some salt (I like to use the himalayan sea salt) Close the lid and wait for the "fshh" noise indicating maximum pressure. Once you hear that (by the time you watch your friend clean up the mess you just made) turn off the stove and just let it just chill out for a bit. Go youtube some fun Indian pop music while you wait =) Ok about 15 minutes later if your pressure cooker looks like its just chillin like a villain and not making any noises, it's ready to open up.....
