Red Nails and Green Soups
Good Evening! Hope you're enjoying your Friday night =) Just got back from a nice mani+pedi with a friend. I am loving the gel manicure! I always get my toes done on Fridays, because its the only day I take a barefoot class. It works out well cause Friday is more of a fun day and "PIYO" is still a great work out but a little more laid back. It combines Pilates and Yoga and is offered at 24 Hour fitness.
So, I have been sticking to my diet but have been feeling a little
lazy the last couple of days (even though I have still been hitting the gym) As soon as I woke up today I went straight to the kitchen and started cooking. I made a cauliflower soup from the E2L book. It looks just like baby food and kinda tastes like it too ;) It's pretty easy and fast using a pressure cooker. I combined cauliflower,carrots,carrot juice, leaks, spinach and a little bit of nutmeg and Italian seasoning. I blended it in my Blendtec to make it nice and creamy! and oh ya I also put some cashews which made it creamier and garlic. I have been eating sooooo much garlic ever since I gave up salt. I feel great but it is kinda stinky ;) Since I already had my juicer out I figured I'll make something before washing it. I started of with Kale which I usually juice with celery since it's really dry but I was out of celery =( The funnest part of cooking is getting creative...I looked in my fridge for something with lots of water and alas BELL PEPPERS =) I also added an apple..and I can't remember if I used lemon or not... definitely will have this again it was delicious.
I then met some friends at the mall. We had lunch at CPK, I ordered a cup of the pea barley soup..yumm...I normally would get a bowl and a salad but I am really trying to eat only enough to make me feel full. I ended up returning my shoes from Neiman's :/ Once I brought them home I realized I am not crazy about them and what I really need is a nice pair of wedges.
By the time I got home after mall, gym and nails I was starving! My gym buddy who is also doing E2L comes to my classes and then we exchange Tupperwares of recipes we make from the book =)Honestly, she usually cooks but today I was proud to give her some soup. She made me stuffed peppers (filled with mushrooms and onions) Sorry I forgot to take a pic because I was so hungry I couldn't wait! She also brought me some more quinoa with veggies. Make sure you don't have more than a cup a day! It has protein and good carbs as well as iron and calcium. It's like every Vegans dream food!

She also made me two types of hummus from the book, white bean and black bean. Growing up in Lebanon, hummus has been in my diet since I was a kid but it's great to see it on menus everywhere =) with different variations.
Here is a dish my mom made earlier this week. It's pretty much just eggplant with tomatoes and garlic, she normaly also puts ground beef in there but she made me some without the meat =P

I knew the logo looked familar ;) found this in my pantry...I have read many great things about Apple cider, my mom drinks a shot of it every morning. I usually just add it in my salads once in a while...
That's all for tonight..going to bed early so I can hit the gym again in the morning ...Gnite!
