Purple Oatmeal


I have been craving oatmeal for sometime now and it was so worth the wait! I hate microwaves so I made these on my stove-top which took about 30 minutes. I know everyone is in a rush in the morning but sometimes you have to put life on slow motion and enjoy things. I will only make this occasionally and maybe next time I will use strawberries to make it a little sweeter. Here is the recipe with some very minor changes that I got from Dr. Fuhrman's (the man who changed my way of eating forever!) book "Eat to Live"

1 cup blueberries (you can also put some apples if you like)
1 banana (this is good if you have a ripened banana that no one wants to eat anymore)
1/2 cup of steel cut (Irish) oats
1/3 cup pomegranate juice
2 Tbsp. chopped walnuts
1 Tbsp. raw sunflower seeds
he also adds the option of adding dried currants which I didn't find but am curious to try 

Add the steel cut oats to boiling water for about 5 minutes, lower the heat and then start adding the fruit 'n' nuts and stir occasionally for about 30 minutes. I also added some cinnamon cause it just makes it smell so Christmasy (an adjective I use to describe holiday scents and tastes)
My dad wanted to add sugar to it...he clearly doesn't get the point NO SUGAR!!! lol I guess you could add some honey but you seriously don't need it and the whole point of this is to get away from our sugar addiction (except sugar from fruit which is awesome)

Let's talk pomegranates! One of my favorite fruits! The recipe called for a little pomegranate juice but all the juices I saw at Trader Joe's were "from concentrate." I ended up finding one at Ralph's that was 100% Juice...


I would rather just buy an actual pomegranate but the already cleaned one's they sold at TJ's were almost 5 bucks which I though was a bit much..Enjoy :P
