Okra n Shrooms
Here is a lunch item from E2L that I tweaked into a yummy appetizer..the recipe was for Whole Wheat Pita Pockets but because the bread I tried to buy seemed stale last night, I decided I don't really want to eat bread anyway. I heated up portobello mushrooms, orange peppers (I thought it was a red one until I started slicing) and some chopped onion in the toaster oven ..during the 15 min of cooking time I made the tahini sauce which I poured over a bed of arugula ( I love prewashed cause I'm so lazy)
the tahini dressing: 1/2 cup tahini, I accidentally put a little too much water just put a little to blend easier or even none, tbsp of lime/lemon juice (I like a bit more juice) 2 pitted dates , a clove of garlic ...I threw them into my blendtec (my favorite blender)...I also threw a few dates in my mouth yum! ....this wasn't the most exciting meal and I kept thinking it would taste great with salt but I resisted..my mom calls the Himalayan salt "your salt" but I told her I don't want any salt. I'm sure she is sneaking in salt here and there anyway so it's more than enough.
My mom made Okra which is definitely an acquired taste ...for some reason you hate it when you are a kid but like it when you grow up...the key is to not make it slimy...lots of lemon and cilantro mmm...I will post the recipe ASAP...she made it with a side of bulgur but I already had enough carbs at breakfast today (oatmeal)
you can never have too much salad we had some cabbage salad on the side...it's getting late and I'm craving something sweet ....I want more dark chocolate but instead I'll have some water and tea and break the habit of eating a snack close to bed time....
