Guiltless Chocolate Affair
Happy Father's Day! I went to a Pilates class today at 24Hour fitness =) I pretty much rolled out of bed threw on some clothes and a pair of flip flops grabbed my mat and headed out. The hardest part of the workout is actually going!!!!!!!!!! It was a cool class that helped me work on my core, pretty challenging at times but the more I go the stronger I will get =) After class my brother wanted to have lunch so I suggested we take a walk to the restaurant Jinky's. I ordered green tea Iced-T and the quinoa salad with no feta cheese. After lunch my brother made me a grapefruit, orange juice for dessert..yummy! By the time I came home I was kinda hungry again so I heated up some leftover soup...I know its almost a 100 degrees but I was too lazy to make anything.
So let me tell you about last night! I went to the mall with my beautiful sister (in-law) and we had lunch at Bloomingdale's. I ordered a hot green tea and the special of the day Salmon with lentil salad. The salmon was probably cooked with butter and I am technically not supposed to have any animal products but it was amazing! After the mall, I went to Namie's which I will tell you more about tomorrow. I was craving something sweet, I wanted chocolate soo bad! I decided to take action, I drove to trader joes and bought a can of black beans and a box of Almond Milk. I know you are wondering where I am going with this but trust me this is gonna blow you away! I (along with the help of Brenda from Lean Secrets and the E2L recipe I saw on Dr. Oz) have discovered the best way to get your chocolate fix and not feel guilty about it! Ready? Check it out
I know I know! I even impressed myself! ;) So here is the recipe I came up with by combining my creativity and what I read online...(and what was available in the kitchen)
BROWNIE
2 CUPS OF BLACK BEANS ...I didn't measure it I just used the small can I bought, make sure you wash it really well because there's alot of nasty sodium...I looked for black beans that weren't canned but didn't find any at Trader Joe's
10 DATES (got these at costco already pitted...I was glad to make the brownies to get rid of the dates because they are addictive and I could eat the whole box :/)
1 tsp Vanilla ...my mom bought Almond Extract thinking it's vanilla so I just used that...she said she hasn't baked a cake in ages so she didn't even notice her Vanilla was missing ...I told her to keep it up! I am glad you don't make cakes anymore =) she loved my brownies btw
1/2 cup Hershey's unsweetened cocoa powder ...who knows how long my mom has had this box..yikes hope it doesn't expire
1 tbsp chia seeds
2 tbsp of nescafe coffee Nescafe Taster's Choice Stick Packs - 72/.1 oz. - Ground & Instant
a stick of cinnamon (which my blendtech can grind up) you can use the powder stuff too
2 tbsp coconut oil
3 eggs (ok ok no eggs allowed on the diet ...so here is my explanation...I used to eat egg whites for breakfast all the time so my mom was nice enough to buy me organic eggs from the market and they have been left untouched and are about to expire so I put them in cause I hate wasting stuff!)
a couple walnuts
lemon zest to cut the egg smell
almond milk just to be able to blend easier
ICE Cream
2 BANANAS FROZEN -I didn't know how long it takes to freeze a banana so I got impatient but next time I will plan ahead
few walnuts meaning like 4 max (they are high in fat)
a handful of blueberries
After I stopped licking the batter lol, I put some coconut oil on the pan...dont think I used enough bc I used a brush and it stuck to the pan...I should have just used PAM but trying to stay away from chemicals...maybe I should use olive oil? Not sure I'm kinda new to baking
preheat the oven 200degrees
bake for an hour and half yes that long...
during this time I blended the "ice cream"
